I experimented and failed!

Because you only used 1 cup of carrots (did you shred your own?) there wasn’t enough moisture in the batter.

The original recipe batter was so little
I doubled it
I only used 1 cup of carrots
Baked it for 45
It came out dry

Best coffee cake recipe I have EVER made. The carrots create a wonderful moistness that can’t be beat. So flavorful. Beautiful crumb. Just the BEST!

It took longer to bake u used a glass dish… So, u only gave it 3 stars bc u used the wrong baking vessel and bc products can vary, and sometimes it takes more liquid to get a drizzle to *your* desired consistency? Ok…

This kind of coffee cake is a brunch cake, made to be served with coffee. It doesn’t’ have coffee in it.
