I haven’t tried that but theoretically yes. Although you don’t taste the cottage cheese – I don’t like it either!

Not cornstarch, but you can use 1:1 GF AP Flour

I was wondering if the cottage cheese in this recipe could be substituted with ricotta instead? No one in my house likes cottage cheese except for me lol.

Do you think this would still turn out alright with the 1:1 gluten free flour? My mother is gluten sensitive and I am looking for an easy egg casserole recipe to use.

This recipe is fantastic! I made this for our dinner tonight, right after seeing it in one of your emails. For dinner, I wanted something simple and easy to go along with the whole wheat bread I made this afternoon. This egg casserole was perfect. Mine was done after 30 minutes. And you’re right, it was not dry or rubbery at all. Perfect texture, loads of good flavor, and very filling. Thank you for sharing so many great recipes!
