I made these with Hershey’s cream cheese chips in lieu of icing, and they were an unqualified hit! I found that they were best after chilling the dough for several hours. These will be in regular rotation for sure!

Amazing! I added a pinch of cinnamon to my frosting and roasted my walnuts. Family’s new fav..my husband literally moaned as he ate them ❤️❤️.

These carrot cake cookies sound delicious and simple to make. I am making these for a customer and don’t plan on using the frosting. Will these be sweet enough, or do I need to increase the sugars?

These cookies were yummy! I put the cream cheese in the middle instead of on top for a little surprise when you take a bite 🙂 delicious!

You can measure carrots in a cup, but I always use a kitchen scale.
