Learn how to make Rainbow Frosting in a swirl pattern for cupcakes, cakes, and cookies! I’m sharing all of my secrets for the best rainbow frosting – it’s so pretty and easy to make. I can’t get over how pretty this is – and it tastes SO MUCH BETTER than store bought frosting!

Rainbow Frosting Cupcakes

One of my favorite frosting techniques is rainbow swirl frosting, and I think you’ll be surprised how easy it is to do. Next to sprinkles, swirl frosting is one of my favorite ways to decorate birthday cakes, rainbow cupcakes, and cookies. You can use any colors you want to dye frosting – I’ve used this same method to make Unicorn Cupcakes!

Make my rainbow cake with this colorful frosting and you’ve got an explosion of rainbows for any party. You can use my homemade American buttercream recipe or even cream cheese frosting for this (or use a can of frosting, I won’t tell). Kids and adults alike with love this frosting! It’s so pretty you can’t help but smile.

Ingredients Needed

  • Vanilla Buttercream Frosting: For the best flavor, use my homemade recipe, or three cans of store-bought white or vanilla frosting.
  • Food Coloring: Gel coloring is the best for getting bright and vibrant colors. I usually use americolor gel food coloring but Wilton works too.
  • Cupcakes, Cookies, or Cake: Use your favorite vanilla cupcakes, chocolate cupcakes or anything you want to decorate with the frosting. Use colorful cupcake liners for even more rainbow fun!

I used the colors of the rainbow for this recipe. If you can’t find all of these colors, you can follow the instructions on the box and mix the ones you have to create the colors you want.

How to Make Rainbow Swirl Frosting

  1. You’ll want to make your frosting by mixing softened unsalted butter with powdered sugar, then adding the vanilla extract and heavy cream (or milk). You can make your frosting with a hand mixer or stand mixer. You want a regular frosting consistency – if you’re using gel coloring it won’t thin it like water-based coloring does.
  2. Divide the frosting into six bowls and tint each a different color. Stir well, so the colors are even.
  3. I place my colors in piping bags or sandwich bags and pipe each color in the order of the rainbow onto a large piece of plastic wrap.
  4. Form the frosting into a log by rolling up the plastic wrap and twisting the ends. Cut off one end of the plastic wrap.
  5. Fit a piping bag with a tip (I use a Wilton 1M piping tip which is a star tip). Place the frosting log in the bag, and then pipe the swirl frosting onto your cupcakes or cake. If you want, decorate with rainbow sprinkles or decorations!

Expert Tips

  • I’ve already mentioned it, but it’s worth mentioning again: use GEL food coloring for the best results. Generic grocery store food coloring will not produce the same vibrant colors.
  • When you’re tinting your frosting, it’s always good to start with less and then add more to get your desired color.
  • This rainbow frosting is freezer-friendly! Once you’ve rolled it up in the plastic wrap and twisted the ends, place it in a freezer bag or airtight container, and it will keep for two months. Thaw it in the refrigerator before using it.

Easy Halloween Cupcakes Anyone Can Make

I am so excited to share these quick and easy Halloween cupcakes with you today! If you’ve been looking for cupcake ideas for a Halloween party, I’ve created five different sweet cupcake toppers that are so easy anyone can make them.

Half the challenge with decorating cupcakes is having the right tools, so you will find everything you need in this post to make these! From frosting to food coloring to tips and Halloween cupcake decorations – it’s all here!

These five designs range from really, really easy to easy! Anyone can make them, and with my tips, they’ll look like a pro made them. Plus, you can make the frosting and cupcakes from scratch or use your favorite cupcake mix and canned frosting to make it even easier.

Basic Ingredients

  • You will need 24 cupcakes baked and cooled. You can make any flavor you like!
  • You will also need two batches of homemade vanilla buttercream frosting, or you can use four cans of vanilla frosting instead.
  • Depending on which cupcakes you make, you may need some chocolate frosting, which you can make or use store-bought. Peanut Butter frosting is great too, depending on what design you’re making.

Instructions

  • Decide what designs you’re going to make and assemble the items you need.
  • Spider Cupcakes: Frost each cupcake with white frosting. Place chocolate frosting in a piping bag with a Wilton #5 tip. Pipe 4 legs on each side of the cupcake. Press an Oreo in the center. Pipe two dots of frosting in the center of the Oreo and add two small candy eyes.
  • Witch Cupcakes: Dye one can (about 2 cups) of frosting green. Use a Wilton 1M tip to pipe a flat swirl on the cupcake. Top with an Oreo. Add a bit more frosting and then top with an unwrapped Hershey’s Kiss. (If desired, use a different color frosting for that part, I used purple).
  • Pumpkin Cupcakes: Frost one can (about 2 cups) of frosting orange. Place frosting in a piping bag fitted with a Wilton #47 tip. Pipe stripes onto the cupcake with the flat edge of the tip pointing up. Add chocolate frosting to a bag fitted with a #5 tip and pipe the face. Use green frosting with tip #106 for the stem.
  • For the Monster Cupcakes: Color a can (2 cups) frosting purple and another can green (or any colors you want). Frost cupcakes using a 1M tip and place candy eyes randomly over the frosting.
  • For the Mickey Halloween Cupcakes: Color 1/3 of the frosting yellow, 1/3 orange and leave the rest white. Use three piping bags with 1M tips. Frost a flat yellow swirl on each cupcake. Chill 10 minutes. Repeat with orange, then chill, then repeat with white. Press two candy melts or mini Oreos on the frosting to resemble Mickey ears.
  • Store cupcakes in the refrigerator for up to 3 days.

  • My vanilla buttercream will work great but if you’re short on time or want easy, use the canned frosting.
  • You can make chocolate frosting to use for the pumpkins and spiders, or buy a can to save time.
  • For the purple and green, check out the baking aisle because some brands of canned frosting sell colors (sold with sprinkles you can set aside for another use). It’s easier than trying to color the frosting.
  • I recommend using Gel food coloring (Wilton or similar) because it won’t thin the icing to get the vibrant colors you want like regular food coloring will.
  • My vanilla cupcake or red velvet cupcakes would be good here too. Or pumpkin cupcakes!

I love this red velvet recipe because they are small batch! If you don’t know, a small batch means that this recipe makes a smaller amount than usual. This recipe makes 4! It is so good because if you have a small group, you do not need to make an excessive amount of cupcakes!

Red velvet is always so fun because of how pretty they are. And they taste great too. They are so versatile and great for any event you have coming up! I’ve done all the math for you so you can make a small batch of cupcakes without having to divide or do fractions!

Ingredients Needed

  • Cocoa powder – Red velvet isn’t chocolate, but there is just a touch of cocoa in it.
  • Baking soda – This is how the cupcakes rise and get nice and fluffy.
  • Vegetable oil – Keeps the cupcakes super moist.
  • White Vinegar – The vinegar in red velvet cupcakes gives that signature flavor, helps activate the baking soda, and helps the red coloring pop.
  • Food coloring: Red for the amazing coloring, but this works with any color! You can use gel food coloring or regular.
  • Frosting: Cream Cheese Frosting is a classic pairing with red velvet.

How to make Small Batch Cupcakes

  • Whisk together flour, sugar, cocoa, baking soda, and salt.
  • Mix together oil, vanilla, egg, and vinegar.
  • Stir wet ingredients into dry ingredients.
  • Add food coloring and stir.
  • Divide evenly 4 cupcake liners. Bake for 15-20 minutes, or until a toothpick comes out clean on the side (not necessarily in the center). Cool completely before frosting.
  • To make the frosting, beat cream cheese and butter with a hand mixer until creamy. Slowly beat in powdered sugar and vanilla extract until smooth. Frost as desired.

Expert Tips

  • Cream cheese frosting is of course the classic frosting to go with small batch red velvet cupcakes, but you can use whatever frosting you’d like (vanilla buttercream is fantastic).
  • Make sure you let the cupcakes cool completely before frosting so the frosting can stay on the cupcakes correctly. 
  • You can also bake these in 2 (8-ounce) wide mouth mason jars. Baking time will be 20-25 minutes.

Witch Cauldron Cupcakes are the perfect fun and spooky Halloween Cupcake! This easy cupcake recipe is easy to make from scratch or semi-homemade and they even have a surprise inside!

Easy Halloween Cupcake Decoration

When I was young my mom’s favorite Halloween costume was a witch. She’d paint her face green and wear a big hat and cackle to all the kids that came to the door. She has the BEST witch cackle I’ve ever heard – and whenever I look at these cupcakes, I remember Halloween at home with her.

These are the EASIEST but most fun Halloween Cupcakes to make: they look like Witches Cauldrons! The black cupcake liner is the cauldron, with the green frosting bubbling out full of all the things witches love: eyes, bats, bugs and skeletons!

Perfect Cupcakes Recipe

Now when it comes to the actual cupcakes themselves, you can use ANY kind you like, but I think that chocolate cupcakes are perfect for Witches Cauldrons because they’re dark like a cauldron would be.

You can use any mix for the cupcakes or make my perfect Chocolate Cake recipe into 24 cupcakes. If you need more than 24, you can use my Favorite Chocolate Cupcake recipe that makes just over 30.

How to frost Witch Cupcakes

Now you could make yourself a batch of my vanilla buttercream but I went the semi-homemade route for these cupcakes.

To frost 24 cupcakes I recommend 2-3 smaller cans of their icing (if you’re shopping in a store) or grab one of the large 4 pound tubs if you’re ordering online, and use about half to three-quarters of it.

Disposable piping bags are one of my favorite kitchen tools and I always have boxes of them in my baking pantry. To prepare for frosting, fit your piping bag with a coupler and tip. To achieve the kind of piled look I did for my cupcakes I recommend a #12 tip, but you can use any you like.

To get the NEON GREEN frosting for my Halloween Cupcakes I used 3 drops of blue and 25 drops of yellow. Having an exact ratio like that makes it foolproof for whipping up more frosting if you run out, and it makes it easy to get the color you want.

Surprise Inside Cupcakes

Instead of just frosting the outside of the cupcake I wanted to make them have a little extra witch-y surprise inside so I made them into Piñata Cupcakes!

A surprise inside piñata cupcake is when you have sprinkles inside the cupcake so they sprinkle out when you eat it. it’s really easy to do after the cupcakes have cooled.

Just cut a small bit of the top of the cupcake out. Then fill the cupcake with your favorite sprinkles. I used one of Wilton’s Halloween Sprinkle mixes (the bat sprinkle mix) because it fit my color palette (and I used them on the outside as well), but you can use ANY color or mix they have.

How to Frost Cauldron Cupcakes

Then place the top of the cupcake back on the cupcake (you may need to cut off some of what you pulled out so it fits) and frost as desired.

Once you have your cupcakes filled with sprinkles and your frosting made, it’s time to frost and decorate your cupcakes!

I frosted them with a high pile of the frosting so they look like a cauldron bubbling up. The neon green color really pops! Here’s how I get my frosting nice and high:

  1. Pipe a small bit in the center of the cupcake
  2. Swirl around that and use the center spot to build it high

For a finishing touch I used some of the Wilton Sparkle Gel to add some depth and glitter to the frosting.

Expert Tip

  • Use extra cupcake liners to hold your sprinkles. I don’t like reaching into the jar because my hands get sticky, so I pour some sprinkles into cupcake liners. It makes for easy cleanup too!

Cake Mix Almond Cupcakes

I love almonds so much, that’s why I made this recipe to have such a tasty almond flavor. This recipe uses toasted almonds and almond extract to perfect the flavor. And if you want to go one step further, you can use almond milk to create an almond trifecta. 

On top of all that, this caramel frosting I used to top these cupcakes is one of the best frostings I have ever made. I got this recipe from my mother-in-law; she’s been making it for years. It’s a cooked frosting and is thick and rich and perfect with the cupcakes.

Ingredients Needed

  • Toasted almonds: Buy slivered almonds. Learn how to toast nuts properly.
  • Yellow or white cake mix: This is the base of the cupcake recipe – any brand works.
  • Milk: Any kind of milk is fine (regular or nondairy).
  • Almond extract: Gives the most of the almond flavoring so don’t skip it!
  • Butter: You need unsalted or salted butter for the caramel frosting – no substitutions!
  • Packed brown sugar: Makes the rich caramel when mixed with butter
  • Powdered sugar: Gives the body to the frosting. Yep – it’s sweet!

How to make almond cupcakes 

  • Toast almonds by placing them in a frying pan and cooking over medium-low heat, stirring constantly and not walking away from the stove, until light golden brown. Remove to a plate or bowl to cool.
  • Place ½ cup of the toasted almonds in a food processor and grind until they are finely ground. Reserve remaining almonds for topping.
  • In a large bowl, beat cake mix, milk, oil, eggs, and almond extract with an electric mixer on low for 30 seconds. Turn the mixer up to medium and beat for two minutes. Fold in ground almonds.
  • Divide batter evenly amongst cupcake liners (about ⅔ full). Bake 20-25 minutes at 350°, until a toothpick comes out clean. Cool completely, about 30 minutes.

If caramel frosting isn’t for you, here are some other options. 

How to make caramel frosting

  • Melt butter in a medium saucepan over medium heat. Stir in brown sugar and heat to boiling, stirring constantly. Reduce heat to low and boil and stir for 2 minutes.
  • Stir in milk. Heat back to boiling then remove from heat. Cool to lukewarm, about 30 minutes.
  • Place the pan in a bowl of ice water and add the powdered sugar.
  • Beat with a spoon until the frosting is smooth and spreadable, being sure to scrape the bottom of the pot while stirring. Remove pot from ice bath.
  • Frost cupcakes immediately and top with remaining almonds. The frosting will set and dry and stiffen up quickly so plan to frost the cupcakes as soon as the frosting is done.

Expert Tips

  • You can freeze these cupcakes, but I do not recommend freezing the frosting. 
  • The frosting is very sweet and goes a long way. Therefore portion according to your liking. Add a pinch of sea salt on the top to make salted caramel cupcakes and cut the sweetness.
  • Since the frosting dries rather quickly, you need to frost these as soon as you make the frosting.

Best Brownie Cupcakes From Scratch

Making these Brownie Cupcakes will give you a rich, chocolatey, and fudgy brownie in cupcake form, which makes them even more fun. This recipe is very similar to my regular brownie recipe, but a bit easier. 

The greatest thing is that brownies go with so many flavors, therefore when it comes to topping the cupcakes–your favorite frosting is sure to go great with the brownie taste! At the end, you’ll be left with 11 cupcakes…seems like just enough to try out multiple new frostings!

Ingredients Needed

  • Vegetable Oil – I go back and forth between using melted butter and oil in brownies. For the cupcakes, I find oil is best.
  • Unsweetened Cocoa Powder: Gives that chocolate flavor – you can use regular cocoa powder or Dutch process cocoa.
  • Baking Powder: I find that adding a bit of baking powder makes these more like cupcakes – that way they’ll rise a bit.
  • All-Purpose Flour – be sure to measure your flour correctly.

How to make Brownie Cupcakes

  • Preheat oven to 350°F. Line cupcake pan with liners.
  • Stir together oil, sugar, and cocoa. Stir in eggs, vanilla extract, baking soda, and salt. Carefully stir in flour.
  • Fill liners about ⅔ full (about 3 tablespoons of batter each).
  • Bake for 20-30 minutes, until a toothpick comes out clean from right along the edge of the liner. Cool completely before frosting.
  • Store in refrigerator loosely covered, serve at room temperature.

You can use whatever frosting you would like in this recipe, but here are some of my favorites!

Expert Tips

  • Be careful not to over bake the cupcakes – a toothpick right on the edge of the liner will come out with a few crumbs.
  • If you don’t want brownie cupcakes, you can make traditional brownies in a 9×9 pan and then frost them.
  • If you decide to make Mint Chip Frosting, be sure that you are using peppermint extract and not mint extract. Mint Extract gives a different taste that isn’t right for this frosting.

Baking brownies at 350° will take around 20-30 minutes. In that window, do the toothpick trick, where you’ll know it’s done when a toothpick comes out clean from right along the edge of the liner.

That’s been me many times and more than once I’ve been tempted to just pick up cupcakes at the store, but then I figured out a way to doctor-up cake mix to make the best pumpkin chocolate cupcakes. They are so easy to make. They’re not just for fall either. Yes, they have pumpkin but you don’t really taste it. Instead, the pumpkin puree makes them so moist and delicious. They taste homemade and, unless you feel like spilling the beans, no one will think they were made with cake mix.

Ingredients Needed

  • Chocolate fudge cake mix or Devil’s food cake mix: Any chocolate flavor cake mix or brand will work
  • Pumpkin puree: Makes the cupcakes super moist – make sure you use puree not pumpkin pie filling.
  • Vanilla Buttercream: For the frosting! You can use my homemade vanilla frosting recipe, or buy store-bought! 

How to Make Pumpkin Chocolate Cupcakes

  • Preheat oven to 350°. Line two muffin pans with cupcake liners. (I got 18 cupcakes.)
  • Mix cake mix, water, oil, and eggs in a large bowl with a hand mixer for about 2 minutes. Add pumpkin and mix until combined. Fill cupcake liners about 2/3 full (I use an ice cream scoop for this).
  • Bake 18-22 minutes, until a toothpick insterted comes out with just a few little crumbs sticking to it. Cool completely before frosting.
  • To make your frosting, beat butter with mixer (hand or stand, your choice) until creamy. Slowly beat in powdered sugar (1 cup at a time). Beat in vanilla. Add 1 tablespoon of cream and mix, then add more cream as necessary to get the consistency you want. Tint with food coloring, if desired.
  • Frost cupcakes and sprinkle with (or dip in) sprinkles. Enjoy!

Expert Tips

  • Since the pumpkin puree is there more for the texture rather than the flavor, you can add spices if you want more of that fall flavor. Check Recipe Notes.
  • Cupcakes are done baking when a toothpick comes out clean from the center of the cupcake.
  • Fill your cupcake liners about ⅔ of the way full to get the perfect amount.
  • These are also great with chocolate ganache frosting or chocolate buttercream!

Do these taste like pumpkin?

The pumpkin is mostly for moisture and body in these cupcakes – not for flavor. If you want a more fall-like cupcake, add pumpkin pie spice.

Easy Mermaid Cupcakes

Ursula from Disney’s The Little Mermaid said it best, “Life’s full of tough choices”. Especially when it comes to making a new recipe for me. I had so many mermaid cupcake ideas and didn’t know what flavor cake mix to use, or if I should add candy melts, sprinkles, and so much more… 

And you know I like to make things easy for you, especially if you’re preparing for a party. That’s why these mermaid tail cupcakes start with a cake mix and finished with mermaid tails and other fun sprinkles.

As for the frosting, store-bought works or my easy vanilla frosting recipe which I used as pictured.

Everyone’s going to be snapping pictures of their adorable mermaid tail cupcake! They make the best addition to a mermaid birthday party since they’re so adorable! 

Ingredients needed

  • Cupcakes: you can use a cake mix or follow one of your favorite homemade Cupcake Recipes. I decided to use my  Funfetti Cupcakes recipe because it adds a fun pop of color. 
  • Frosting: I used vanilla buttercream. You can either make your own frosting or if you’re in a hurry, you can use store-bought. 
  • Decoration: You’ll need candy melts, a mold, and sprinkles!

The kit I used is no longer available, but here are some options for you:

How to make mermaid cupcakes

  1. Melt the pink and blue candy melts in two separate microwave-safe bowls until melted and smooth. (Learn how to melt candy without crying!)
  2. Place melted candy into one of the piping bags and snip off the tip. 
  3. Pipe into the mermaid tail molds.
  4. Cool down to room temperature then release them from the mold by turning them upside down.
  5. Frost onto cupcakes with the desired tip from the cupcake kit. 
  6. Top cupcakes with sprinkles and a mermaid tail!

Variations

  • Use gel food coloring for the vanilla frosting to dress up your cupcakes even more
  • Change up the cupcake flavors by using a different cake mix flavor!

Instructions

  • Place the pink candy melts in a microwave safe bowl. Tip: I like to use paper bowls for easy clean up. Melt in 30 second increments, stirring between each, until melted and smooth. Place melted candy into one of the piping bags and snip off the tip. Pipe into tail molds, tap molds to settle. Chill to set.
  • Once the pink tails are hardened, release from the mold by turning upside down.
  • Repeat step 1 with the blue candy melts.
  • Frost cupcakes with desired tip from the cupcake kit. (The kit comes with a round tip and a start tip.)
  • Top cupcakes with sprinkles and a mermaid tail.
