Made these twice with “old fashioned” peanut butter (the kind you have to stir, and I did) before I read that I’m not supposed to use it. They were spectacular! Why should I not have used that kind of peanut butter?

These have become a staple favourite for my husband, and I love how easy they are to make. I opt for softened butter rather than melted, and can easily stir all ingredients together by hand which saves the hassle of pulling out and cleaning up the mixer. I doubled the last batch and froze dough pucks. Usually place them on the tray while the oven preheats, and they bake up beautifully. We actually found we prefer the thickness and texture they have without the fork print in them – a happy accidental discovery when I forgot to do it! I use the cheapest no-name brand of crunchy peanut butter I can find.

I’ve made pb cookies and regular choc chip cookies many times. Decided to try this because i love reese pb cups. This recipe is AWESOME. So quick and easy. They are absolutely delicious. I used plant butter only because my partner is lactose intolerant. Saving this recipe for life!!! So so good.
