The Best Easter Snack Mix Recipe

My Easter Bunny Bait Recipe is the perfect Easter treat for the holiday! Make this recipe in a large bowl for a party, or package it up in individual treat bags for lunch boxes and Easter baskets! Everyone will be loving this recipe – it’s one of my favorite sweet and salty snack mixes.

Snack mixes are one of my favorites to make because they can be changed so easily – If there is something I have put in my recipe that you do not like, feel free to change it! Plus you can change up the M&M colors for any holiday – it’s the perfect movie night snack and it lasts up to a week in an airtight container.

Ingredients Needed

  • Rice Chex Cereal: You can use any kind of Chex cereal you like.
  • Multi-Grain Cherrios: Or any flavor of Cherrios.
  • Pretzels: Mini twists or pretzel sticks
  • Peanuts: Feel free to use pecans or almonds, or omit the nuts
  • White Almond Bark: Or white candy melts (Ghirardelli are my favorite). I don’t recommend using white chocolate chips for this.
  • Easter M&M candies: The bright pastel colors really pop in this snack mix recipe.

How to make Bunny Snack Mix

  • Line a large baking sheet with wax paper or parchment paper.
  • Stir together cereals and pretzels in a large bowl.
  • Melt candy according to package directions in a microwave-safe bowl. I usually heat it for one minute, then stir, heating in additional 30 second increments until melted and smooth. Pour over cereal mixture in bowl. Stir to combine.
  • Lay out the snack mix on the prepared baking sheet and allow to set (chill to set to make it harden faster).
  • Break up mix into pieces and add peanuts and M&Ms.

Expert Tips

  • This recipe adds the nuts in after the chocolate melts, but if you want them to be coated in chocolate as well–add them before!
  • Feel free to remove the nuts entirely if you do not want them.
  • Chex and Cherrios have so many flavors…use your favorite flavor.
  • Store in an airtight container and it will last up to a week.

  • I always have Multigrain Cheerios on hand, but Honey Nut Cheerios would be so good too.

  • This is so easy to make for any holiday. For Valentine’s Day, use pink and red M&Ms. You can make it for Christmas with holiday candies, or for Halloween with candy corn!

Easy Chocolate Birds Nest Cookies

These adorable no bake birds nest cookies are a variation of classic no-bake haystack cookies all dressed up for Easter! It’s one of my favorite recipes to make for the spring season because they’re super easy and no-bake. These aren’t those baked thumb print cookies rolled in coconut – they’re more like a crunchy candy.

If you’ve never had haystacks, I am very excited for you to try this recipe! They’re sweet and crunchy no-bake cookies that are simple to make. Classic haystacks look like… haystacks! But, it’s really easy to turn them into cute chocolate Easter birds nest cookies. If you want an easy recipe, Easter nests are the one to make!

Ingredients in Easter Bird’s Nest Cookies

  • Candy Melts – I recommend Ghiradelli Melts, Candiquik, or Almond bark. While you can use milk chocolate chips, semi-sweet chocolate chips or dark chocolate chips, I recommend buying the melts as they won’t melt in your hands as easily.
  • Chow Mein Noodles – these are crunchy noodles in a can. You can find them in the Asian aisle at the grocery store.
  • Chocolate Eggs – Cadbury Mini Eggs are great, but you can also use jelly beans, robins’ eggs, or M&M eggs.

How to Make Birds Nest Cookies

  1. Place the candy melts in a large microwave-safe bowl. Warm them in 30-second increments on 50% powder, stirring between each increment until smooth.
  2. Add the chow mein noodles to the melted candy melts and stir.
  3. Drop scoops of the mixture onto a prepared baking sheet. Top each nest with three to four candy eggs.
  4. Chill the Easter haystacks until they are set.

Expert Tips

  • For the best birds nest cookies, use good-quality candy melts. Ghiradelli is best, but Candiquick and almond bark are also good. I would avoid the kind you can get at craft stores because they don’t taste as good.
  • Use white chocolate, dark, or milk chocolate candy – your choice!
  • You can top the chocolate Easter nests with any candy eggs you like.
  • Use a cookie scoop to form the nests and place the eggs before the candy melts set.

Easter Rice Krispie Treats are a fun springtime twist on the classic treat! Ooey-gooey marshmallow, crispy rice cereal, and chocolate eggs make this a sweet and easy dessert for all of your spring celebrations – the kids love them!

Easy Easter Rice Krispie Treats

Rice Krispie treats were always the traditional plain treats with just butter, marshmallows, and cereal when I was growing up. Don’t get me wrong – the classic treat is perfect as is, but I can’t resist putting a twist on a traditional recipe.

Gooey marshmallows, Rice Krispies cereal, candy Easter eggs – these are the BEST Easter treats! They’re a no bake dessert that everyone loves, takes 15 minutes to make and are so cute too with the pastel colors.

Ingredients in Rice Krispie Treats

  • Butter: I always use unsalted butter but you can substitute salted
  • Marshmallows: I find it easiest to use mini marshmallows but you can substitute an equal weight in large if that’s all you have.
  • Rice Krispies: feel free to use generic cereal (or any flavor, like cocoa Krispies or fruity pebbles)
  • Mini eggs – some crushed and some left whole. This is what makes them EASTER Rice Krispie Treats! Cadbury Mini Eggs are my favorite but you can use any chocolate mini eggs.

How to Make Easter Krispie Treats

  • Line a 9×13” baking with parchment paper and set it aside.
  • Melt the marshmallows and butter in a pot over medium low heat. Stir as the butter and marshmallows melt, and as soon as the mixture is smooth, take it off the heat so it doesn’t burn and stir in vanilla extract.
  • Fold the cereal and chocolate eggs into the melted marshmallows. Fold them in until evenly coated in the marshmallow mixture. 
  • Transfer the mixture to the prepared baking dish. Use a greased spatula to lightly press the bars into an even layer.
  • Let the bars set for one hour at room temperature. Remove them from the pan and slice them into squares and serve.

Microwave Directions

While I usually make my cereal treats on the stove you can do them in the microwave. Remember that microwave cooking times may vary depending on the strength of your microwave.

In a microwave-safe bowl heat butter and marshmallows for 2 minutes. Stir, then heat an additional minute and stir again. If needed, continue heating in 30 second increments, until the mixture is smooth. Then continue making the treats as listed above.

Recipe Tips

  • Make sure you use fresh marshmallows for your treats! Even slightly stale marshmallows will change the texture of the bars – instead of soft, they’ll end up chewy. If they’re really stale, the bars will be too hard to even eat.
  • Use a light hand when you press the mixture into the pan. You don’t want to compact the cereal too much because it will make the bars too dense.
  • You can switch out the chocolate eggs for other Easter-themed candy like M&Ms or try mixing in nuts or Easter-colored sprinkles.
  • Make gluten-free Rice Krispie treats by using gluten-free cereal and marshmallows.

Can you freeze Rice Krispie treats?

Place treats in a single layer in an airtight bag, or place layers between wax paper. Or wrap each treat individually to keep them fresher longer. Freeze for up to a month.

If you’re looking for a super easy dessert bar for your Easter celebration, these Easter Rice Krispie Treats are it! They are a fun spin on the traditional dessert.

Ingredients

  • ½ cup (113g) unsalted butter
  • 15 ounces (426g) mini white marshmallows
  • 1 teaspoon vanilla extract
  • 9 cups Rice Kripsies (approximately 400g)
  • 2 cups mini eggs crushed and whole

Instructions

  • Prepare a 9×13 baking pan by lining it with parchment paper
  • In a large saucepan/pot over medium heat, heat the marshmallows and butter while continuously mixing until both are completely melted and the mixture is smooth. Careful not to let it burn. Remove from the heat and stir in vanilla.
  • With a wooden spoon, fold in the Rice Kripsies until the cereal and mini eggs until completely coated with the marshmallow mixture.
  • Pour the mixture into the lined baking pan and spread it evenly in the pan. Use a greased spatula to press the mixture gently down into the pan.
  • Leave to set for 1 hour at room temperature. Once set, remove from the pan and cut into squares.
  • Best if served fresh but stays fresh in an airtight container at room temperature for up to 3 days.

Why We Love Carrot Cake Cookies

If it’s springtime and Easter time, you can bet I’m going crazy for all the carrot cake recipes like these soft carrot cake cookies. They are a great way to get that fix without making and baking a whole cake. 

They have everything – freshly shredded carrots, cinnamon-spice, chopped nuts, and a dreamy cream cheese frosting to top them off. These are Mel’s favorite cookies! He loves carrot cake anything and gives these five stars. This is a soft and chewy cookie recipe with tons of flavor and cream cheese frosting!

Ingredients in Carrot Cookies

  • Cinnamon: for that spice cake/carrot cake flavor
  • Unsalted Butter: make sure it’s softened
  • Brown sugar: I love the flavor brown sugar adds to these cookies
  • Large egg and Vanilla extract: again, typical for cookies
  • Shredded carrots: shred your own carrots using a box grater for best results.
  • Chopped pecans or walnuts: optional for some crunch

How to Make Carrot Cake Cookies from Scratch

  1. Whisk the flour, baking soda and cinnamon in a small bowl.
  2. Using a stand mixer fitted with the paddle attachment (or a hand mixer), cream the butter and sugar on medium speed. Mix in the egg and pure vanilla extract until smooth Add the dry ingredients and mix. Be sure to scrape the sides of the bowl while mixing. Stir in freshly grated carrots and chopped nuts.
  3. Scoop two tablespoons of cookie dough to form each ball. Place them two inches apart on a prepared baking sheet. Gently press each ball to flatten them.
  4. Bake the cookies for 13 to 16 minutes at 350 degrees f. The cookies are done when they are no longer glossy on top. Allow them to cool on a wire rack before frosting.
  5. Make the cream cheese frosting by mixing all the ingredients in the large bowl of a stand mixer. Frost cooled cookies as desired.

How to Store Cookies

Room temperature: Keep them in an airtight container or well wrapped with plastic wrap, and they will keep for three days. Store any unused frosting in an airtight container in the refrigerator.

Freezer: They will keep in the freezer for up to two months in a freezer bag or airtight container. You can freeze them plain and add the frosting later or freeze them frosted.

Expert Tips

  • Use a cookie scoop to scoop the cookies so they’re uniform in size. Use any size cookie scoop you want.
  • Don’t forget to lightly press the cookie ball with the palm of your hand before baking. Don’t flatten too much but they need a little help to get started.
  • Swap out walnuts for pecans or omit the nuts entirely!
  • Don’t use pre-shredded carrots. Be sure to shred your own so they soften in the oven.
  • You can frost these cookies with a knife your piping bag – your choice. I also love sprinkling some chopped nuts or cinnamon onto the top of each cookie for decoration.

Do I have to frost the cookies?

No, you can definitely leave them plain, but cream cheese frosting is SO good on them!

Can I make Carrot Cake Sandwich Cookies with this recipe?

Yes for sure! Just make the cookies 1-tablespoon size instead of 2-tablespoon size.

Can I make the frosting a color?

Yes you can tint the frosting any color you like. Or dust the tops with cinnamon instead of nuts.

Why didn’t my carrot cookies flatten?

Make sure you press them down a bit with the palm of your hand before baking. These stay puffy and soft – like carrot cake – and don’t spread much.

  • 1 ¾ cups (217g) all-purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (90g) shredded carrots (see note)
  • ½ cup (56g) chopped pecans or walnuts

Frosting

  • 4 tablespoons (57g) unsalted butter, softened
  • 4 ounces (112g) cream cheese, room temperature
  • cups (170g) powdered sugar
  • 1 teaspoon vanilla

Instructions

  • Preheat oven to 350°F. Line two cookie sheets with parchment paper or silicone baking mats.
  • In a small bowl, whisk flour with baking soda, cinnamon and salt. Set aside.
  • Cream butter and brown sugar in a large bowl with an electric mixer 1-2 minutes. Mix in egg and vanilla until smooth.
  • Add dry ingredients to wet and mix until smooth. Stir in carrots and nuts.
  • Scoop 2 tablespoon size balls onto cookie sheets 2-inches apart. Lightly flatten with the palms of your hand.
  • Bake for 13-16 minutes or until no longer glossy. Cool before frosting.
  • To make frosting: beat butter and cream cheese with an electric mixer until smooth. Slowly mix in powdered sugar then add vanilla and salt. Beat on medium high speed until smooth.
  • Frost cookies as desired, top with a dusting of cinnamon or finely chopped nuts.
  • Store in an airtight container for up to 3 days or freeze (frosted or unfrosted) for up to 2 months.

Notes

  • Be sure to shred your own carrots – don’t use the pre-shredded kind. Also – don’t pack them in the measuring cup.
  • You can use walnuts or pecans in this recipe or omit them. Substitute/add raisins if you want!

This easy Crustless Spinach Quiche is the best recipe for any breakfast or holiday! It is made with caramelized onions and spinach without a crust, so it’s super easy! It really is the perfect egg casserole recipe.

Crustless Quiche Recipe

There are so many reasons to love a crustless spinach quiche! It’s easy to make and super flavorful. It’s such an easy dish for weekend brunch, holidays, or just because you are craving an egg casserole. Quiche typically has a crust, but this one doesn’t need it and I promise you will not miss it! (No crust also makes it gluten-free!)

Quiche is very similar to a frittata except the quiche is mixed and baked and frittatas are somewhat cooked on the stovetop and finished in the oven. The texture of the finished quiche is soft and perfect with the vegetables and shredded cheese.

Classic quiche recipes are great, but take this fun crustless twist and you will not be disappointed.

Ingredients in a Crustless Quiche Recipe

  • Eggs: You can’t have quiche without eggs.
  • Milk: I like using whole milk but you can also use nonfat or nondairy.
  • Spices: Salt and pepper for flavor, add any other spices you love!
  • Frozen Chopped Spinach: Be sure it’s thawed and drained well. Drain the excess moisture out of the spinach by placing it (thawed) in layers of paper towels or a kitchen towel and wring it out over the sink to get out all the water.
  • Mozzarella Cheese: You can use any kind of shredded cheese you like: gruyere cheese, cheddar, parmesan cheese, or Swiss cheese are all good options.
  • Onion: Caramelized onions takes the flavor to another level!

How to make Crustless Spinach Quiche

  • Place a large skillet over medium-low heat. Cook onions in olive oil for about 15-20 minutes, stirring often, or until they’re caramelized.
  • Preheat oven to 350°F. Spray a quiche pan (or 9-inch pie dish or square baking dish) with nonstick cooking spray.
  • Remove spinach from box and place in several layers of paper towels or a clean kitchen towel. Squeeze out all the water from the spinach. Remove towel.
  • Whisk eggs and milk in a large bowl until frothy. Stir in the spinach, onions, cheese, kosher salt, and black pepper.
  • Pour egg mixture into prepared pan. Bake 35-45 minutes, or until it’s browned and no longer jiggly. Cool slightly then serve.

Expert Tips

  • Be sure to squeeze all the liquid out of the spinach. Defrosted frozen spinach has a lot of water in it. Wrap the bundle in a few paper towels or a clean kitchen towel and ring it out to get all the liquid out of it.
  • You do not need to caramelize the onions–it is totally up to you. If you don’t caramelize them, make sure to at least saute them.
  • How to know when quiche is done baking: If you have an instant thermometer, it should read about 170°F internal temperature when it’s done.
  • Store leftovers in refrigerator. This is best eaten the day it’s made but you can also store leftovers covered with a layer of plastic wrap or aluminum foil in the refrigerator. For reheating, I like using the microwave or air fryer.

How do you store crustless quiche?

Store covered with plastic wrap or in an airtight container. If you want to have it for leftovers, just reheat for about 30 seconds. Remember that reheated eggs are not always the best so it would be best to eat all on the first go.

How to freeze Crustless Quiche?

You can freeze it whole or slice cooled quiche into portions and freeze individually in sandwich size bags for up to 2 months.

This Champagne Cake is soft and sweet and packed with champagne flavor. It’s in the cake, the soak, and the glaze on top! This is the perfect loaf cake pound cake recipe – it’s soft and moist and SO good.

Champagne Cake Recipe

Champagne gives this cake a delicious taste, but it also replaces the milk in a typical pound cake recipe, which keeps the cake moist and makes it airy and light. The key to this is that the champagne or sparking wine you use needs to be bubbly! If the alcohol is flat, the results will not be that same. This cake is great for a New Year’s Eve party or really whenever you want.

For the most part, the alcohol will cook out of the cake in the oven. So anyone can eat it, but once you add the sweet champagne reduction and frosting, the champagne gets added right back in! This pound cake is not at its true form without the frosting and glaze! They add so many amazing elements to the cake!

Ingredients Needed

  • Unsalted Butter: I melt it for easy mixing.
  • Sour Cream: Makes this cake moister and richer, and the acid helps activate the baking powder.
  • Eggs: Room temperature eggs are best.
  • Champagne: Champagne is used in all elements of this cake. You can use sparkling wine, Prosecco, or make it a pink champagne cake!

  • Stir melted butter, granulated sugar, and sour cream in a large bowl. Stir in eggs, one at a time, then mix in vanilla extract. Add champagne and dry ingredients and stir just until moistened. Pour into prepared pan.
  • Bake in a 9×5-inch loaf pan until a toothpick comes out clean.
  • While the cake is baking, make the champagne soak: Simmer the sugar and champagne in a small saucepan over medium heat until it boils. Boil for 1 minute, then remove from heat.
  • Remove slightly cooled cake to a wire rack set over a cookie sheet. Use a pastry brush to brush the champagne glaze over the top of the cake. Let the cake finish cooling completely before frosting.
  • Instead of making a champagne buttercream, we’re making a simple glaze with powdered sugar, more champagne, and some heavy whipping cream or milk. Spread over the cake with an offset spatula.

  • If you add the glaze and frosting make sure to keep up high if your kids are sneaky!
  • Store loosely covered at room temperature for up to 3 days.
  • I stir this by hand but you can also use a stand mixer fitted with the paddle attachment.

Ingredients

For the cake:

  • 1 ½ cups (186g) all purpose flour
  • 1 teaspoon baking powder

Instructions

  • Cool for 15 minutes in the pan. Use a knife to loosen around the edges, then carefully remove the cake and place it on a cooling rack set over a cookie sheet. Use a pastry brush to brush the champagne glaze over the top of the cake. Let the cake finish cooling completely before frosting.
  • To make the frosting, whisk the powdered sugar, heavy whipping cream, and 1 tablespoon of champagne. Add more champagne as needed. Pour and spread over pound cake. Chill to set.

  • You can use any bubbly sparkling wine or Prosecco. Make sure it’s not flat.

How to decorate cookies with buttercream – and the best buttercream frosting recipe for cookies – skip the royal icing and make this! It’s easy to do and tastes so much better.

I always have preferred buttercream cookies to royal icing ones – I’ve made my cut out cookies with frosting for over 20 years and always used buttercream. While I love watching royal icing videos and think they’re so pretty – they’re just too complicated for me. I’m not a frosting perfectionist – while I love the look of them I can never seem to make them look the way I see the cookies in my head. Buttercream never does that to me!

A basic cookie icing is so simple with just a few ingredients – and you can frost with it in so many ways. Use different tips and food coloring to create the sugar cookies of your dreams – without worrying about drying time, flooding consistency, or overflow. Christmas cookies goals unlocked!

I promise this recipe not only tastes amazing but it’s something anyone can do. If I can do it, so can you. It’s the best sugar cookie frosting!

Important Ingredients

This recipe is very similar to my vanilla buttercream frosting recipe, with one noticeable change: milk vs heavy cream.

  • Butter: Use softened room temperature butter. I prefer using unsalted but you can use salted butter, just reduce or omit the added salt.
  • Powdered Sugar: this gives the body to the frosting. Don’t pack it!
  • Milk: While my normal buttercream for cakes uses heavy whipping cream, I prefer milk for cookie frosting. It dries a bit crustier than cream or half and half. You can also use nondairy milk, like almond milk or soy.
  • Vanilla Extract: This is so important for flavor! I always use pure vanilla. I don’t find it changes the color too much – and I don’t like the flavor of imitation, which is why I don’t use the clear vanilla extract you find at craft stores. You can also add a bit of almond extract for extra flavor if you like.

How to make Buttercream for Cookies

  • Add softened butter, powdered sugar, and salt to the bowl of a stand mixer fitted with the paddle attachment. You can also use a hand mixer, but you’ll want to add a little bit of sugar at a time and it will take longer.
  • Mix until the sugar and butter are crumbly, then add the vanilla and milk a bit at a time. Mix on medium-high speed until creamy and the frosting has a spreadable consistency. Be sure to scrape the sides and bottom of the bowl during mixing.
  • Add food coloring as desired and place in piping bags or use an offset spatula to frost your cookies.

Tools I love for decorating cookies

Sometimes I just use a butter knife to frost cookies, but other times I want to be more fancy and use piping tips and food coloring.

  • Piping Bags: I always use plastic disposable piping bags. The 12-inch size is perfect.
  • Piping Tips: While I have a piping tip kit, I usually use just a handful of other tips. My favorites are a 1M tip, tip number 1-5, and some of the small star tips.
  • Couplers: Adding a coupler to a pastry bag allows you to easily switch out the tip and use the same color on another design.
  • Food Coloring: Gel food coloring is the best to use because it doesn’t thin your frosting like liquid food colors and they give nice vibrant colors (like, actual red and black).
  • Bag Clips: These aren’t required but I like them because it helps keep the frosting from drying out.

Favorite Piping Tips

I often wonder what a piping will look like with different tips. I’ve created these graphics so you can see which tip looks like what.

For outlining cookies and filling in the center, I’ll use Tip #3 or Tip #4.

For trees or decorative stars, I’ll use Tip #30, 74, 3B, or Tip 199.

These are all Wilton tip numbers – different brands have different numbers.

  • You can even freeze frosting for up to 3 months in an airtight container.
  • Allow chilled frosting to come to room temperature on the counter for at least 1-2 hours. You may need to add a bit more milk if the frosting is too thick after sitting.
  • Sprinkles make every cookie design look better!
  • This frosting goes perfectly on chocolate cut out cookies, classic sugar cookies, and even shortbread cut out cookies!
  • These cookies are stackable with minimal transfer after you’ve allowed them to dry – the top of the icing will form a slight crust.

Are buttercream cookies stackable?

Once you let the frosting set, these are stackable with just minimal transfer. They do not harden like royal icing cookies but they aren’t so messy you can’t stack them on a plate.

Can you freeze buttercream cookies?

Place them in a single layer on a cookie sheet and cover them with plastic wrap. Freeze until solid then stack in airtight containers between layers of parchment or wax paper. Separate stacks before thawing.

This Soft Shortbread Cookie recipe is the ultimate cookie for the holidays. The recipe makes a lot of cookies and they’re a blank canvas – you can make so many different ways. I’m showing you how to make 4 different shortbread cookies, including chocolate dipped shortbread!

Chewy and Soft Shortbread Cookies

Years ago I worked with a brand called Krusteaz and they had a shortbread cookie mix. I don’t think it’s still available, and a lot of people wanted to know how to make them, because they were so good. The taste was classic shortbread that was soft in texture instead of crumbly. This is the substitute I came up with!

These are a bit softer and melty than your traditional buttery shortbread cookies, but that’s what makes them the best for me. I love homemade buttery and soft cookies! Plus you don’t need a rolling pin – these are drop cookies!

These drop cookies have 4 easy flavor variations. Whether you decide to dip them in chocolate, add m&ms, or make shortbread thumbprint cookies, you’re going to love using this recipe for Christmas cookies (or anytime you feel like them!)

Ingredients needed

  • Butter: unsalted butter at room temperature. If you use salted butter, just omit adding salt later. Real butter is important when making shortbread.
  • Vegetable oil: A neutral oil doesn’t add flavor but is what keeps the cookies soft. The combination of butter and oil makes a soft and chewy cookie (like my World’s Best Cookies).
  • Powdered sugar: The sugar used in the cookies is confectioners’ sugar instead of granulated or brown sugar. This also keeps them soft.

How to make soft shortbread cookies

  • Beat butter and oil with a stand mixer fitted with the paddle attachment, then slowly mix in powdered sugar and salt. Slowly add salt and flour and mix until a thick dough forms. 
  • Scoop 1 or 2 tablespoon sized balls of cookie dough onto baking sheet. Flatten slightly with the palm of your hand. Bake until the edges just turn brown and tops are just no longer translucent. Cool on a wire rack before dipping or stacking.
  • For M&M Shortbread Cookies: add M&Ms on top of the cookie dough ball before baking.
  • For Chocolate Dipped Shortbread Cookies: Dip cooled cookies halfway into melted chocolate or white chocolate and sprinkle with crushed candy canes, toffee bits, nuts, or sprinkles while still wet, if desired.
  • For Thumbprint Cookies: make 1 tablespoon sized balls of cookie dough. Roll them between your hands to form a ball. Bake until lightly golden on the bottom and then press a thumb hole with a wooden spoon handle or the back of a measuring spoon. Cool completely. Fill with about 1/2 teaspoon of jam, cold hot fudge ice cream topping, or cold caramel ice cream topping.

Variations

  • Dip in chocolate: You can dip soft sugar cookies in anything you like, but I like using semi-sweet or white baking chocolate. 
  • Shortbread thumbprint: they look difficult to make but are super simple! I rolled 1 tablespoon sized balls of dough and made a “thumbprint” before baking using a wooden spoon handle. After they bake, fill them with your favorite filling: jam or chocolate or caramel or use ice cream topping. 
  • M&Ms: are so festive and easy to add onto your buttery shortbread cookie. Just scoop the cookie dough and then press the M&Ms on before baking.
  • Extracts: Add almond extract, or even lemon or orange for some extra flavor. You could also add a bit of lime or lemon zest.

Expert Tips

  • Mixing the cookie dough will take awhile with a hand mixer so I recommend using a stand mixer instead to save some time.
  • I love hot fudge with some sea salt in the back, and salted caramel ice cream topping in the front of your shortbread cookie.
  • Drizzle your thumbprint shortbread cookies with a little melted chocolate to dress them up even more.
  • To make the best christmas shortbread cookies, decorate them with crushed candy canes or toffee bits or nuts or sprinkles.

Is shortbread supposed to be soft?

Yes except your traditional shortbread cookies have a little crisp to the bite. This cookie recipe is softer and more buttery than any shortbread cookie recipe. 

Can you freeze this recipe?

Yes, you can! This is the perfect make ahead holiday cookie since it keeps well in the fridge for up to 1 month. 

How do you know when shortbread is done baking?

Soft chewy shortbread cookies are made from one shortbread recipe, with 4 cookie recipe variations. Add M&Ms, dip them in chocolate, or make shortbread thumbprint cookies all from one recipe!

  • 1 cup (226g) unsalted butter softened
  • ½ cup (118ml) vegetable oil
  • 1 ½ cups (170g) powdered sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 3 ½ cups (434g) all-purpose flour

Instructions

  • Preheat oven to 350°F. Line two cookie sheets with parchment paper or silicone baking mats.
  • Beat butter and oil with a hand or a stand mixer, then slowly mix in powdered sugar, vanilla, and salt. Slowly add flour and mix until a thick dough forms. This will take awhile with a hand mixer!
  • Scoop 1 or 2 tablespoon sized balls of cookie dough onto cookie sheets. Flatten slightly with the palm of your hand. Bake until the edges just turn brown and tops are just no longer translucent (2 tablespoon sized cookies: 10-14 minutes, 1 tablespoon sized cookies: 8-12 minutes). Cool completely before removing from cookie sheets. Store in an airtight container for up to 3 days or freeze for up to one month.
  • For M&M Shortbread Cookies: add M&Ms on top of the cookie dough ball before baking. For 2 tablespoon sized cookies, I suggest using 5-6 plain M&Ms, any color.
  • For Chocolate Dipped Shortbread Cookies: melt 4 ounces of white or semi-sweet baking chocolate according to package directions. Dip cooled cookies halfway into chocolate, tapping off the excess, and then place on a wax paper lined cookie sheet and chill until hardened. Sprinkle with crushed candy canes, toffee bits, nuts, or sprinkles while still wet, if desired.
  • For Thumbprint Cookies: make 1 tablespoon sized balls of cookie dough. Roll them between your hands to form a ball. Use the back of a wooden spoon to slightly make an indent in the center of each cookie. Bake until lightly golden on the bottom (8-12 minutes) and then re-press hole with the wooden spoon handle as needed. Cool completely. For filling, fill with about 1/2 teaspoon of jam, cold hot fudge ice cream topping, or cold caramel ice cream topping. If desired, melt some dark or white baking chocolate to drizzle over the top.

Notes

  • Add 1/4 teaspoon almond extract or lemon extract (or any kind) for more flavor
  • Don’t overtake – they are supposed to be soft.
  • Store in an airtight container or freeze for up to 3 months.
