Garlic Green Beans are a great side dish any time you need a quick vegetable that’s simple to make. You only need a few ingredients and these are super flavorful from all the garlic – plus roasted green beans are so much better than boiled!

Roasted Green Beans

If you’ve never tried garlic roasted green beans, I’m pretty sure you’re going to love them. You only need five ingredients and two of them are salt and pepper! 

The green beans are roasted with olive oil and garlic which turns golden and caramelized giving the whole dish so much flavor. It also smells pretty amazing while it’s cooking! 

This dish is easy to prep in about ten minutes and it’s one of my favorite easy side dishes to make all year long or for the holidays. If you’ve never roasted green beans or added tons of garlic – you MUST try them. I know you’ll love it!

Ingredients Needed

  • Green Beans: be sure to trim the ends, or buy one of those bags of green beans that’s already trimmed. I also love the small haricot vert that you get at the grocery store – they’re smaller and thinner so they cook quicker but my family loves them – especially the kids.
  • Garlic – While I love garlic paste, be sure to buy fresh garlic and press it yourself for this recipe.

How to make Garlic Green Beans

  • Peel your garlic. I like to use my garlic press to prep the garlic. It’s easier and faster to press garlic than to mince it with a knife. Sprinkle the pressed garlic over the top along with some olive oil, salt and pepper.
  • Spread the green beans into an even layer on a baking sheet.
  • Roast them for about 20 to 25 minutes or until they’re tender in a 400°F oven.

Expert Tips

  • Buy the bags of green beans for easy prep.
  • You do not have to boil the green beans before roasting which makes them super easy. Green beans cook through easily without par-boiling.
  • Be sure to check them after about 15 minutes to see how they’re cooking. All ovens roast differently!
  • You can also cook these in the air fryer for about 10-15 minutes.

This is the easiest side dish – Roasted Garlic Green Beans are a simple way to make green beans and so flavorful with lots of fresh garlic. It’s the perfect holiday side dish but it goes great with any meal!

Parmesan Baked Zucchini is one of our favorite easy side dishes! Just a few ingredients make this the perfect side dish any meal – but especially on those busy weeknights. We have this as part of a 30 minute meal so often!

Parmesan Baked Zucchini

As I’ve mentioned, we absolutely love roasted vegetables. Roasting vegetables are actually my favorite way to cook them!

We enjoy zucchini made every way: sautéed, baked, as bread and muffins, or as pie bars…you know, all the important ways you make zucchini. As a side dish, oven roasted zucchini is my favorite way to make them, especially when they’re roasted zucchini with parmesan.

Ingredients in my Roasted Zucchini Recipe

  • Breadcrumbs – I love using Italian style, or you can use panko
  • Parmesan – grated parmesan cheese (the kind from the canister)
  • Garlic powder – be sure you’re not using garlic salt
  • Onion powder
  • Italian seasoning – or a combination of your favorite dried herbs
  • Zucchini – Once you have your seasoning mix put together, slice your zucchini however you like it. You can make these into rounds or fries.

How to bake Easy Baked Zucchini

  • Mix together the seasoning with breadcrumbs and quarter cup grated parmesan.
  • Slice your zucchini into wedges or slices.
  • Simply toss the zucchini wedges in the seasoning mix and place them on a rimmed baking sheet.
  • Preheat oven and bake zucchini until it’s golden brown.

Expert Baked Zucchini Tips

  • Use non-stick foil or spray your cookie sheet with nonstick cooking spray to avoid sticking.
  • Make sure the zucchini is in a single layer on the baking sheet.
  • Heat your oven to 400°F.
  • You don’t need to toss your zucchini with olive oil but you can – toss it with 1 tsp before coating with spices.

How long does it take to roast zucchini?

Roasting the zucchini shouldn’t take longer than 20-30 minutes, depending on how you’ve sliced it. Thinner slices will cook faster, thicker will cook slower.

Can you make air fryer zucchini with this recipe?

Instead of baking the zucchini in the oven, make air fryer zucchini by preheating your air fryer to 400° and adding the wedges into the basket. Time will be dependent on your air fryer, but it will take about 10-15 minutes.

Do you peel zucchini for baking?

I leave the peel on for when I’m making it as a vegetable or I’m using it in baked goods.

How do you cut zucchini for baking?

For side dish recipes, you’ll want to cut the zucchini in wedges or coins/slices or dice it. For baked goods, you’ll want to grate it on the large side of a box grater.

How to store leftover zucchini?

Store the leftover parmesan zucchini in an airtight container for up to 3 days. It will get mushy as it sits so it’s best to reheat this in the air fryer or in the oven at 400°F.

Green Beans with Bacon and Onions

I actually love vegetables (way more than I love fruit), and I like them raw and steamed, but roasting them is my absolute favorite. From broccoli to asparagus to green beans, roasting vegetables brings out a delicious flavor that’s so much better than just steaming or sautéing. I’ve discovered I like so many more vegetables when I roast them, including Brussels sprouts and cauliflower.

This simple side dish is easy to prepare and even easier to clean up, and will add a bit of green on your dinner table. There are so many ways you can make these roasted green beans: with bacon, with onions, or even with parmesan. Adding the bacon makes it the ultimate comfort food side dish.

Ingredients for Baked Green Beans

  • Green Beans – I prefer using fresh green beans and buy the bag so they already come cut or trimmed. But you can substitute thawed frozen green beans.
  • Onion – White or yellow onions are great in this dish but you can also use a shallot.
  • Bacon – I prefer center cut bacon, but use your favorite kind.
  • Salt and Pepper – this should to taste.

How to make Green Beans with Bacon and Onion

  • You start this dish by frying up some bacon. Dice it up firs, then cook it to however crispy you like it. Reserve the bacon fat to season the vegetables with!
  • Make sure your onion is chopped bite size. And you can chop the green beans or leave them long.
  • Toss green beans and onions in the bacon fat and add some pepper and a pinch of salt.
  • Place the green beans and onions on a cookie sheet covered with foil and sprayed with nonstick cooking spray. Bake until cooked through.
  • Once the green beans and onions are roasted, toss them with the bacon bits and serve. The bacon grease adds extra flavor and everyone will love that they have a green side dish that’s not a boring one!

How long does it take to roast green beans?

I roast my green beans at 400°F for about 20-30 minutes, or until they’re crunchy yet cooked through and starting to shrivel and brown.

Be sure to stir them at least once or twice during cooking to make sure they cook evenly.

This roasted green bean recipe is perfect for a crowd: I used almost a pound and half of green beans. If this is for a holiday, it’ll serve quite a few people.

Easy Parmesan Brussel Sprouts

If you think you’re not a fan of Brussels sprouts, then you’ve never had them roasted. I used to think I hated them, but then I tried Parmesan Brussel sprouts and, after the first bite, realized I am a fan.

What makes them so special? It’s all about the roasting. Brussels sprouts are bitter, but when you cook them until they’re golden and crispy on the outside and soft and tender on the inside, they turn into sweet bites. Roasting brings out the natural sweetness – they taste amazing!

Roasted Brussel sprouts with Parmesan are so easy – the perfect recipe if you’ve never roasted sprouts before. I’m sharing all of my best tips, so they turn out perfectly every time. Once you start making them this way, you’ll never want them another way again!

Ingredients Needed

  • Brussels sprouts trimmed and cut in half (if they are large, cut them in thirds)
  • Olive oil
  • Salt and pepper
  • Onion powder
  • Garlic powder
  • Grated Parmesan cheese

How to Make Parmesan Brussel Sprouts

  • Coat a rimmed sheet pan with cooking spray.
  • Place the sprouts in a bowl and add the olive oil, seasonings, and cheese. Toss to coat them evenly.
  • Place them on the baking sheet cut side down, and roast them for 30 minutes at 400°F. Stir them once or twice during cooking so they roast evenly.

Storing Instructions

Store leftover roasted Brussel sprouts in an airtight container in the refrigerator. They will keep well for three to four days.

Expert Tips

I’ve been roasting Parmesan Brussel sprouts for years and have the best roasting method. So be sure to follow the tips so you get a perfectly roasted batch every time.

  • Season the sprout really well – don’t skimp on the amounts!
  • You should cut them so they are approximately the same size. Usually halving them works, but if they are large, cut them into thirds. This will ensure they all cook evenly.
  • Roast them directly on the baking sheet. I don’t recommend lining the sheet pan with foil – the sprouts will get crispier without it! Also, be sure to place them cut-side down so they turn a nice golden brown.

You can use any seasonings you like, so have fun experimenting! But, honestly, even if they’re seasoned with just some salt, pepper, and olive oil, they’re so delicious.

What pairs with Brussel sprouts?

Parmesan crusted Brussel sprouts are the perfect side dish for so many main dishes. We love them with steak, pork chops, baked chicken, pot roast, and even salmon. For the holidays, pair them with roast turkey or ham!

I also love to add roasted Brussel sprouts to salads, so whenever I roast a batch, I double it, so there are plenty of leftovers. Toss them with some lettuce, sliced apple, some bacon, and some balsamic glaze drizzle, and you have the perfect lunch recipe!

Air Fryer Broccoli Recipe: The BEST Way!

Broccoli is always a great side dish but cooking it can be a challenge! Cooking broccoli in your air fryer takes away all the guesswork, so you get perfectly cooked broccoli florets every time. I love roasted vegetables, but sometimes I don’t want to turn on the oven, or I’m using the oven for something else – so, hello, air fryer!

I could go on and on about how much I love my air fryer, but I’ll just share this – you can cook so many things in it with a fraction of the oil. I love that with veggie side dishes because I like to keep them as light and healthy as possible. Broccoli is just one of many things I love to air fry. It’s so simple!

Why you’ll love this recipe

  • I think air fryer broccoli tastes even better than oven-roasted broccoli. You can use a lot less oil and the broccoli cooks evenly.
  • Sometimes when I roast it in the oven, it comes out too soft, or some florets are still too crisp. I don’t have that problem with the air fryer.
  • Don’t even get me started with boiled broccoli – that’s the saddest ever! If this is the only way you’ve cooked it well, friend, you need to get an air fryer if you haven’t already!
  • This Is such an easy side dish – it’s ready in less than 15 minutes! It goes with so many main dishes you’ll make it on repeat.

Ingredients for Broccoli in Air Fryer

  • Broccoli: Buy it fresh – not frozen. You can buy a head and chop it yourself or buy florets.
  • Vegetable Oil or Olive Oil: You only need ½ teaspoon!
  • Spices: Garlic powder, Black pepper, Onion powder, and Salt

How to Cook Broccoli in Air Fryer

  • Place the florets in a bowl and toss them with the oil and seasonings.
  • Put the seasoned florets in the air fryer basket.

Growing up, I hated cooked carrots. I’d eat raw ones all day long but cooked? No, thank you! But now I’ve perfected how I make them so that I love them just as much cooked as I love eating them raw.

The secret is to roast them. Roasted carrots have the best texture, and the flavor is amazing. Roasting draws out the natural sweetness and you get a nice caramelized flavor. They’re so much better than boiled carrots!

Roasting is also easy; it’s hard to overcook a roasted vegetable: if it gets too done, it’s clearly burned. However, it’s so easy to overcook boiled vegetables, especially carrots. They don’t change color as green ones do, and before you know it, you have a soggy, mushy mess.

Seasonings for Cooked Carrots

With all vegetables, it’s important to season them before roasting. I love to season my carrots with a spice mix and something sweet, so this is a honey-roasted carrots recipe. They’re savory with a hint of sweetness. In other words, delicious!

  • Olive oil – I prefer oil to butter for roasting because oil can go to a higher temp without smoking.
  • Honey (or maple syrup)
  • Kosher Salt
  • Pepper
  • Garlic Powder
  • Onion Powder
  • Italian Seasoning – I used dried seasoning. Feel free to substitute thyme, rosemary, or parsley.

How to Cook Baby Carrots

  1. Par-boil your carrots.
  2. Once they’re par-boiled, then it’s time to season them with the honey and seasoning mixture.
  3. Cook carrots on a rimmed baking sheet pan until soft and roasted. Use aluminum foil or parchment paper for easy cleanup.

How to Pre-Cook Carrots

Par-boiling means to partially boil or partially cook your carrots by boiling them for a short time. I only boil these for a couple of minutes; you don’t want them fully cooked when you par-boil. You want them partially cooked so that you can finish them off by roasting them.

If you don’t par cook the carrots, they will cook faster on the outside than the inside when they are in the oven. It also gives them a better texture. Raw carrots that are roasted can be a little rubbery and chewy. Par boiling softens them, so they have a tender texture.

How long to boil carrots for?

  • Stovetop: Place the carrots in a saucepan with water. Bring the water to a boil, cook the carrots for three minutes, and then drain them.
  • Microwave: Place the carrots in a microwave-safe bowl or dish. Add ¼ cup of water. Microwave them for two minutes and then drain the water.

How Long to Roast Carrots

How long to cook carrots in the oven will depend on the size. I like to use baby carrots for this recipe because they are all the same size. You can use regular carrots, but you should cut them into pieces the same size as baby carrots.

They will take approximately 20 to 30 minutes to roast at 400°F. All you need to do is coat the carrots in the spices, oil, and honey spread them on a baking sheet, and pop them in the oven. When they are caramelized and tender, they’re done!

  • For easy clean-up, line the baking sheet with foil. Just be sure to coat it with cooking spray, so the carrots don’t stick.
  • If you use regular carrots, cut them into even-sized pieces, so they cook evenly. Depending on the size and thickness, you will need to adjust the roasting time.
  • You can make whole roasted carrots, but the cooking time will differ. Try to use whole carrots that are approximately the same thickness.
  • Experiment with different spices and seasonings. There are endless possibilities so use up what’s in your spice rack to create different flavors.

The BEST Cauliflower Recipe

I don’t know who discovered roasting vegetables and made it mainstream but I want to hug them. I absolutely would choose any vegetable over fruit, but I still don’t love eating my veggies. A sure-fire way to get me to eat almost any vegetable is to roast it.

Cauliflower, like Brussels sprouts, is kind of an acquired taste, I think. It’s a strong flavor that not everyone loves. I know I did NOT like it growing up at all. I always said I didn’t like it and avoided it like the plague until I tried it roasted. Then I became a cauliflower convert!

Of all the cauliflower recipes, roasted cauliflower is my favorite!

Where and how to buy cauliflower

You can buy cauliflower in any grocery store. Make sure that the white florets are white and free of any dark spots or mushy areas. Fresh cauliflower will keep up to a week in the refrigerator if you buy it at the right time, so be sure to inspect it before buying.

How do you cut and prepare cauliflower for roasting?

The stem of a cauliflower is hard to work around. I like to cut the head in half and then cut off as much of the thick stem as possible before slicing the florets. Once the stem is dealt with, you cut or break the cauliflower into florets much like broccoli.

They sell cauliflower already sliced (or even riced!) in the prepared foods aisle. Those are perfectly fine to buy, just be sure to check the dates for the freshest produce. Those packages have a sneaky way of being outdated!

Once the florets are sliced, wash them well and then drain.

Best Seasoning for Cauliflower

Vegetables taste better with tons of seasoning! Salt and pepper are fine but adding herbs and garlic and parmesan just make the meal more enjoyable. This recipe uses:

  • Onion Powder
  • Garlic Powder (not garlic salt)
  • Salt
  • Pepper
  • Parmesan: Grated parmesan, from the green canister.

I love adding parmesan cheese to veggies – it makes them so good. Just be sure to get the grated parmesan (i.e. from the green canister), not the shredded kind.

How do you roast cauliflower?

  1. Decide on your seasonings.
  2. Line a cookie sheet with aluminum foil for easy clean up (optional) and spray it with nonstick cooking spray.
  3. Place the cauliflower in a single layer on the cookie sheet.
  4. Bake in a preheated 400°F oven, rotating the pan and stirring it once or twice, until the cauliflower is nice and golden. This will take 25-30 minutes, depending on the size of your florets.
