Easy Tater Tot Casserole

This hamburger tater tot casserole recipe is so easy and a great classic comfort food. It’s a ground beef casserole with tater tots on top – we love some crispy tater tots around here!

Many casseroles call for canned soup, but it’s a tater tot casserole without cream of chicken soup! Instead of soup, I use gravy. The gravy adds the perfect texture and flavor, plus you can use leftover gravy, homemade, or store-bought.

Cheesy tater tot casserole is great for weeknight dinners, but you can also assemble it the day before for dinner the next day. We absolutely love this recipe for a quick comfort food dinner.

Ingredients in Ground Beef Casserole

  • Ground Beef: Or use ground turkey – your choice. I prefer using lean ground beef (96/4 but you can use anything you like).
  • Spices: Onion powder, Garlic powder, Kosher salt, Ground black pepper
  • Gravy: This is the PERFECT recipe to make with leftover gravy! That’s right: it’s a tater tot hotdish without condensed soup!
  • Stock: Use beef or chicken stock to thin out the gravy.
  • Frozen Peas: Or use your favorite frozen vegetables.
  • Frozen Tater Tots: Needed since it’s Tater Tot casserole!

How to Make Tater Tot Casserole with Hamburger

  1. Cook the ground beef in a large skillet over medium heat.
  2. Add the onion powder, garlic powder, salt, and pepper. Cook the seasonings with the meat, breaking it up while it cooks until the ground beef is no longer pink.
  3. Drain the excess fat from the skillet, and then add the gravy and stock. Stir until the sauce is smooth.
  4. Mix in the peas and then transfer the ground beef mixture to a 9×9” baking dish.
  5. Top the filling with the tater tots – they should be in a single layer in the casserole dish.
  6. Bake the gravy tater tot casserole for 20 to 25 minutes or until the tots are crispy and the filling is hot.

Variations

  • You can make this casserole recipe with hamburger, ground turkey, or ground chicken!
  • Add one to two cups of shredded cheddar cheese or mozzarella on the top!
  • Any kind of stock will work like chicken stock, beef stock, or vegetable stock. You can even use water if you don’t have stock on hand.
  • This is a great way to use up leftover vegetables! Use your favorite frozen veggies or leftover fresh vegetables. We love this tater tot casserole with green beans or with corn.
  • Make this tater tot casserole easy and use store-bought prepared gravy. It’s also a great way to use up homemade gravy. Any gravy flavor will work, too.

Expert Tips

  • I have a recommended amount of stock to use in this recipe, but you may need to adjust it depending on how thick your gravy is. You want the sauce mixture to be thick but not too thick, so add up to a ½ cup of extra stock to thin it, if needed. On the other hand, reduce the amount of stock if the gravy you use is thinner.
  • Want to make it low-carb? I love to use caulitots instead of tater tots to make the casserole lighter. They work great!
  • Have leftovers? Store them in an airtight container in the refrigerator for up to three days.

Yes, frozen hashbrowns will work great! Layer them on to off the filling before baking the tater tot casserole.

If you want to freeze gravy tater tot casserole, wait to bake it. Assemble it as instructed, and then cover the pan tightly with foil. Freeze the casserole for up to three months. Thaw it in the refrigerator and then bake it as instructed.

  • 1 pound lean ground beef or ground turkey
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon Kosher salt

Instructions

  • Preheat oven to 400°F.

Why You’ll Love My Taco Lasagna Recipe

I got this recipe from the wife of a teacher colleague when I first started teaching, back in 2000. She brought it to a party and I immediately had to have the recipe. I’ve been making it ever since, and it’s my go-to meal to take to a friend in need.

It’s layered just like a traditional lasagna but instead of lasagna noodles you use corn tortillas like you would for enchiladas. Add some other favorite southwestern ingredients like seasoned ground beef, cheese, and green chiles and you end up with family-friendly dinner that’s easy to make.

It’s so much easier than making enchiladas or lasagna, too. No boiling pasta required and instead filling and rolling the tortillas you just layer everything in your baking dish. You still get all the great flavors but without all the work – this is an epic casserole recipe!

Ingredients Needed

  • Ground Beef: You can also substitute ground turkey. I’ve made it both ways.
  • Taco Seasoning: Use your favorite packet. Because we’re using the packed you don’t need to add any chili powder or spices – makes life so much easier! Feel free to use a homemade taco seasoning if you have one!
  • Canned Diced Tomatoes: I love using petite diced but either one works fine.
  • Tomato Sauce: Use a small can
  • Diced green Chiles: The kind that come in the can – add so much spice!
  • Corn Tortillas: You can swap mini flour tortillas if you prefer, but corn soaks up the filling better.
  • Monterey Jack Cheese: Can’t have lasagna without cheese! I’ve also made this with cheddar cheese – pepper jack cheese would be fantastic too!

How to make Taco Lasagna Casserole

  1. Cook the meat in a large skillet until it’s browned. Add the taco seasoning, tomatoes, tomato sauce, and green chiles.
  2. In a small bowl, combine ricotta cheese with the eggs.
  3. Cut your corn tortillas in half and shred your cheese. Drain a can of sliced olives.
  4. Spread half of the beef mixture in the bottom of a 9×13 inch baking dish. Place half of the tortillas in an even layer on top. Spread half of the ricotta over the top and the sprinkle half of the shredded cheese over the top.
  5. Repeat the layers again starting with the beef and then top the casserole with the rest of the shredded cheese and olives.
  6. Bake until the cheese is melted and the casserole is heated through.

Expert Tips

  • We love this taco casserole just as it is hot from the oven, but sometimes we add some toppings like you would for enchiladas. Here are some ideas if you want to add some garnishes:
    • Spoon your favorite salsa over the top.
    • Add some sour cream.
    • Sliced avocado, olives and green onions are great.
    • Add a spoonful of guacamole.
    • A sprinkling of chopped cilantro or parsley adds a nice pop of color.
  • If you are busy, make it ahead of time! You can make the filling and assemble the casserole, then cover it with plastic wrap and aluminum foil up to a day in advance.
  • You can freeze the entire casserole too – thaw in refrigerator before baking.
  • If desired, you can add a can of black beans (drained) to the filling while cooking.

Leftovers will be good kept in the fridge for up to three days. You can keep them in the freezer in an airtight container for a month and then reheat them when you want some!

Ingredients

  • 1 ½ pounds ground beef
  • 1 package taco seasoning
  • 1 (15 ounce) can diced tomatoes
  • 2 (8 ounces each) cans tomato sauce
  • 1 (4 ounce) can diced green chilis
  • 10 corn tortillas cut in half
  • 8 ounces ricotta cheese
  • 2 large eggs lightly beaten
  • 2-3 cups shredded Monterey Jack cheese
  • 1 (2.25 ounce) can sliced olives, drained

Instructions

  • Preheat oven to 350°F.
  • In a large skillet, brown the beef; drain fat. Add the taco seasoning, diced tomatoes, tomato sauce, and green chilis. Mix well and bring to a boil, reduce heat to low and cook uncovered 5 minutes.
  • Combine ricotta cheese and eggs in a small bowl.

  • Bake for 20-30 minutes, or until cheese is melted and everything is heated through. Let stand 10 minutes before cutting into squares.

This Turkey Chili Recipe is a true 30 minute meal and is soon to be one of your favorites! Especially in the winter months, I love a good bowl of chili and this is the one I always make. You can slow cook it longer, but it’s delicious in just 30 minutes!

Best Turkey Chili Recipe

Luckily, chili is one of those dishes that is extremely quick and easy to make. It’s done on the stove top and has simple ingredients you already have. My husband loves chili and this is one of his favorites! I love making turkey chili but you can also swap out ground beef or ground chicken in this recipe.

Serve this with your favorite chili toppings and your family will love it. Plus, the leftovers of this are perfect for topping nachos or tater tots or on baked potatoes. I love cooking once and eating twice – makes my life so much easier.

Ingredients Needed

  • Turkey: ground turkey is my go-to, but again, use any ground meat. I recommend something lean, like 93/7.
  • Spices: Cumin, Salt, Chili Powder, Pepper, Garlic powder, Cayenne pepper
  • Green chilis: I used canned diced green chilis for some spice.
  • Canned tomatoes: Adding crushed tomatoes takes a lot of work out of the recipe. A large can means I don’t have to add extra tomato sauce.
  • Canned black beans: You can also use pinto beans or kidney beans.
  • Chicken stock: I prefer low sodium chicken broth

How to Make my Turkey Chili Recipe

  1. Cook ground turkey in a medium soup pot or dutch oven. Break it up into small bite-sized pieces.
  2. Add the diced onion and cook until the onion is almost translucent. Drain fat as needed.
  3. Add the spices to the turkey and onion mixture and stir it evenly, scraping all the little bits off the bottom of the pan.
  4. Add the diced green chilies, crushed tomatoes, beans with their liquid, and chicken stock. Stir everything together thoroughly.
  5. Cover and bring mixture to a boil. Cook the chili, stirring it often, until the mixture thickens and flavors meld together, about 15-20 minutes (longer if desired). It will start to look more like a chili and get thick when it’s about done. 
  6. Add additional salt, black pepper and/or cayenne as desired.

Toppings for Chili 

The great thing about chili is that it is fully customizable! I love to decorate my chili with all sorts of yummy toppings. The toppings I like best are:

  • Shredded cheddar cheese or Monterey Jack
  • Chives or green onions or cilantro
  • Sour cream or plain greek yogurt
  • Chopped avocado
  • Sliced jalapeñoo

Feel free to customize and see what you like best! My daughter always requests cornbread to go with it, but tortilla chips or Fritos are fantastic too.

Expert Tips

  • Add a small amount of cayenne and then add more to taste after it cooks a bit! It’ll get spicier as it cooks.
  • It’s important to use chicken stock or broth for flavor – you can also use beef or vegetable stock. This gives it the all day flavor in just 30 minutes.
  • Make sure to let the chili full thicken during cooking. Chili has always been more rich and hearty and less soupy. Letting it thicken and adding great flavors makes for a great chili. You can even simmer this longer than 20 minutes if you want a thicker chili. I’ve let it simmer up to 2 hrs.
  • Store leftover chili in the refrigerator in an airtight container or store in the freezer for up to 1 month. Reheat in microwave.

Easy Teriyaki Chicken Recipe

This recipe has my favorite homemade teriyaki sauce, which pairs so well with any chicken! It adds a bit of spice, but the best flavor. My homemade teriyaki sauce can be made as a marinade or as a thick glaze for chicken or pork. It’s a simple recipe with just a few ingredients. Not only is it good with chicken, but steak as well!

I always try to find boneless chicken for homemade meals like this one because it is just easier to eat overall. This recipe also has you cut the chicken into smaller pieces; the smaller you cut the chicken the faster it will cook! I prefer chicken breasts, but if you have or want to use boneless skinless chicken thighs, that’s great too.

Teriyaki Sauce Ingredients

  • Soy Sauce – I always use low sodium soy sauce
  • Honey: Or you can use brown sugar (I’ve also used Swerve sugar-free brown sugar with success)
  • Red Wine Vinegar: or you can substitute apple cider vinegar or mirin (rice vinegar)
  • Garlic Cloves: I love using fresh but powdered is fine too.
  • Ginger: I used powdered but if you have fresh, grate some into the sauce.
  • Chicken Breasts: Skinned and Boneless. You can also use chicken thighs.
  • Cornstarch: This is for thickening the sauce.

How to make

  • Whisk together water, soy, honey, vinegar, garlic, ginger, and pepper in a measuring cup or dish.
  • Heat a large skillet over medium-high heat. Add oil to the pan. When hot, add the chicken pieces in a single layer. Brown on one side about 5 minutes then turn and cook until almost cooked through (5-8 more minutes, depending on the size of the pieces)
  • Pour the sauce mixture to the pan and cook until chicken is cooked through.
  • Meanwhile, mix cornstarch with 1-2 teaspoons of cold water to make a slurry. Add it to the pan and stir to combine. Cook a few more minutes, the sauce will boil and thicken. Once the sauce is thickened and the internal temperature of the chicken is 165 degrees f, the recipe is done.
  • Serve hot over rice with a garnish of green onions.

Expert Tips

  • I like to serve this recipe on a plate or even in a bowl on top of rice! To add a vegetable I think a side of broccoli or green beans would go great.
  • Sesame Seeds are great garnish too.
  • Store leftover chicken in the refrigerator in an airtight container. Microwave to reheat.
  • Make extra sauce and store it in the freezer – thaw in a small saucepan.

  • Heat a large frying pan over medium-high heat. Add oil to the pan. When hot, add the chicken pieces in a single layer. Brown on one side about 5 minutes then turn and cook until almost cooked through (5-8 more minutes, depending on the size of the pieces)
  • Add the teriyaki sauce to the pan and cook until chicken is cooked through.
  • Meanwhile, mix cornstarch with 1-2 teaspoons of cold water to make a slurry. Add it to the pan and stir to combine. Cook a few more minutes, the sauce will boil and thicken. Once thickened, remove from heat.
  • Serve hot over rice with a garnish of green onions.

Teriyaki sauce can also be used as a marinade. Add chicken or beef to the sauce and let sit at least 2 hours before cooking. Discard marinade after soaking, do not use it as a sauce.

The BEST BBQ Totchos

If you’re new to homemade totchos, allow me to introduce you. There are all kinds of tater tot nachos recipes, and the one I’m sharing is always a favorite. If you’ve ever had Sonic totchos, they’re basically the same thing – a combination of tots topped with creamy cheese sauce and all the toppings like jalapeno, more cheese, diced tomatoes, and sour cream.

So, like nachos but with hot and crispy tots instead and topped with BBQ chicken. These tater tot nachos are the best game-day snack, party appetizer, or fun Friday night dinner for the family. Plus, they’re easy!

Ingredients Needed

  • Cheese Sauce: We’re going to make homemade queso for this recipe but you can use a jar of sauce you get at the store – or skip!
  • Cheese: Monterey jack cheese for the sauce – be sure to shred it your self so it melts easier. I used a triple blend fiesta cheese for the topping (use cheddar cheese if you prefer).
  • Spices: Salt, garlic powder, onion powder, cumin, cayenne
  • Frozen Tater Tots: The tater tots are the “chips” of the nachos. Buy whatever brand you like.
  • Shredded chicken – I use rotisserie chicken and toss it with BBQ sauce. Use up leftover chicken for this, or make instant pot shredded chicken!
  • BBQ Sauce: Use your favorite. I’m loving G Hughes sugar free sauces right now but you can use your favorite brand/flavor.
  • Garnish: You can garnish with jalapeños, tomatoes, or even green onions, guacamole, and pico de gallo.

How to make Totchos with BBQ Chicken

  1. Make the queso by melting the butter over medium heat, then adding the flour and milk and whisking until smooth and thick.
  2. Add in some of the cheese and spices. This can be done a few hours before and reheated before assembling the nachos.
  3. Mix shredded chicken with barbecue sauce and set aside.
  4. Bake tater tots on a baking sheet according to package directions. Top with sauce, chicken, and cheese. Bake until cheese is melted then add any toppings.

Expert Tips

  • Add some toppings to the totchos! I love diced tomatoes, sliced jalapenos, diced red onion, and sour cream with a sprinkle of lime.
  • You can also add salsa, black beans, black olives, or fresh cilantro on top.
  • Make sure to measure out your butter and flour properly because those ingredients are thickening agents for the queso.
  • Bake the tater tots until they are golden brown, they could get soggy otherwise.

How to store leftover totchos?

Store totchos with queso in an airtight container in the refrigerator. They will keep for a few days, but the tots won’t be as crispy. I think they’re best when they’re made. You can reheat tot chose in the air fryer with the proper parchment insert below.

Instructions

Make the Queso (this can be done ahead of time):

  • Melt butter in a skillet over medium heat. Sprinkle flour over butter and whisk until foamy.
  • Slowly pour in milk, continuing to whisk until mixture is smooth. Allow the mixture to thicken (it should coat the back of a spoon), stirring constantly.
  • Once thickened, remove the skillet from heat. Add in 1 cup of shredded cheese and mix until melted. Add in salt, garlic powder, onion powder, cumin, and cayenne and mix.
  • Cover and set queso aside. This can be made earlier in the day and reheated on the stove or the microwave to thin (it will thicken as it cools).
  • Place tater tots in a single layer on a cookie sheet or 9×13-inch pan. Bake according to package directions.
  • Mix shredded chicken with barbecue sauce and set aside.
  • Spoon some queso over the tater tots. Spoon barbecue chicken onto the dish. Sprinkle with additional Monterey Jack, cheddar and/or fiesta blend cheese. Add tomatoes and jalapeño if using.
  • Place the dish in the oven and bake for 7-9 minutes until warmed through and the cheese is melted.
  • Garnish as desired, serve immediately.

  • This dish is best served fresh and hot.
  • If you would like to make ahead, prep the toppings (tomatoes, onions, jalapenos) and store in airtight containers. Make the queso and store in an airtight container. When ready to serve, heat the queso in a skillet over medium-low heat for 5-7 minutes until warmed through and creamy.
  • If you prefer crispier totchos, add an extra 5 minutes to the instructed baking time on the package and use less queso when layering. Or, keep the queso separate altogether and serve as a side that can be spooned over the top of the totchos.
  • Garnishes: Feel free to garnish with any or all: sour cream, salsa, pico de gallo, guacamole, green onions, black olives
  • Additions: the great thing about this recipe is you can alter it to your taste. Add corn, black beans, or use pre-cooked ground turkey or ground beef instead of chicken.
  • Store leftovers in refrigerator in an airtight container. If you reheat, I recommend reheating in the oven or in the air fryer (with a air fryer parchment insert) so the tots get crisp again.

Best Pasta Salad Recipe

This pasta salad is super easy to make. The sauce of this salad brings in a bit of spice with red pepper flakes. All of the pasta elements are inspired by an Arrabbiata Style, which is a tomato based sauce that packs a spicy punch from the addition of dried red chili flakes. I love that this salad recipe doesn’t have any mayonnaise – that makes it perfect for a pot luck.

Pasta salads are so great because you can customize them for yourself. You can add anything you want: black olives, artichoke hearts, chicken, bell peppers, and salami are all great ingredients that would also taste great in this salad. Mix everything in a large bowl for a party and everyone will be pleased!

  • Pasta: Use any kind of pasta you like. Rotini, penne, farfalle, fusilli, anything!

  • Add the pasta, tomatoes, spinach, mozzarella, and shallot to a large mixing bowl.
  • Make the dressing: add the sun-dried tomatoes (with their oil) to a food processor or blender. Add the garlic, 1 teaspoon red pepper flakes and 1/2 teaspoon salt. Pulse until sundered tomatoes are finely chopped, then run the food processor or blender while adding the olive oil. Run until a thick sauce forms. Taste, then add more pepper flakes and/or salt to taste.

Crunchy Baked Chicken Tenders

If there is one thing I can count on Jordan to eat that’s not pizza or grilled cheese, it’s chicken tenders. I decided I wanted to make an at-home version of our favorite takeout chicken tenders, and I wanted them to be oven baked but crispy, like those fried ones we love.

This easy chicken tender recipe is made in the oven but they come out crunchy because of the breading. Every layer of the coating is seasoned so they’re super flavorful and they’re the perfect oven-baked alternative to fried chicken tenders or chicken strips.

This easy chicken recipe is the perfect weeknight meal, done in under an hour. All the kids will love these too, even the picky eaters!

Ingredients Needed

The secret to making oven baked chicken tenders juicy and crispy is the coating.

  • Chicken Breast Tenders – the tenderloin is that little piece that is usually attached to boneless skinless chicken breasts. They’re the perfect size for a chicken tenter recipe!
  • Flour + Spices: I add salt, pepper, garlic powder, onion powder, smoked paprika and Italian seasoning to my flour. Want some heat? Add a pinch of cayenne pepper.
  • Eggwash
  • Panko (or breadcrumbs): I love using Panko breadcrumbs in this recipe. Panko is a Japanese-style breadcrumb that’s a bit lighter and fluffier than a traditional breadcrumb. Coating chicken tenders with panko ensures a crispy crunchy coating, but you can use regular breadcrumbs if you prefer.

What kind of chicken is best?

For my chicken tender recipe I use chicken breast tenders. I like to buy them as tenders, but you can certainly just buy boneless skinless chicken breasts and slice them yourself. I find that the chicken tenders I buy taste better and have a better texture than slicing myself (plus I hate handling raw chicken).

I usually remove the tendon from my chicken tenderloins because I don’t like eating it. You can skip that if you want but I use the fork method: place the edge of the tendon between the tines of a fork. Grip the tendon with your fingers using a paper towel and pull. It will slide out, keeping the tender intact under the fork.

How to make Baked Chicken Tenders

Seasoning every layer of your food is the key to success; that is, season as you cook, not just at the end.

  • Mix flour with spices in a shallow dish (I use a pie plate).
  • Mix egg with spices in a third bowl or dish.
  • Mix breadcrumbs with spices in another dish.
  • Coat each chicken tender in the flour mixture, then the egg, then the breadcrumbs.
  • Place chicken tenders on a wire rack over a cookie sheet. Spray them with nonstick cooking spray then bake in a hot oven, turning them once during cooking. This will keep them super crunchy!

Expert Tips

  • The key to baking chicken tenders and keeping them crispy so they taste fried (but aren’t) is using a rack on your baking sheet. I highly suggest getting a rack for your roasting pan (or a jelly roll pan set that comes with a rack). Baking chicken tenders straight on the cookie sheet will either keep them soggy on one side or ensure that the coating peels off when you flip them. Baking on a rack allows the heat to circulate and create a crunchy coating on all sides.
  • My other browning secret for chicken tenders: spray the tenders with nonstick cooking spray when you put them in the oven and then again when you flip them.
  • Bake your chicken nuggets at 400°F for about 40 minutes, give or take, depending on thickness. Check doneness with a meat thermometer or instant-read thermometer – they should be 165°F when cooked through.
  • Store chicken leftovers in an airtight container in the refrigerator for up to 3 days.
  • You can also make these in the air fryer! I also love to reheat leftover chicken tenders in the air fryer to keep them crispy.

They sell panko in the aisle where you get normal breadcrumbs – they should be right next to them.

  • 1 – 1 ½ pounds chicken breast tenders
  • ½ cup all purpose flour
  • ¾ teaspoon salt

  • Place flour in a shallow dish. Add ¼ teaspoon EACH salt, pepper, garlic powder, onion powder, smoked paprika and Italian seasoning to the flour and stir.
  • Place egg, water, and dash of hot sauce in a second shallow dish. Whisk to combine.
  • Place panko, parmesan, ½ teaspoon EACH salt, pepper, onion powder, garlic powder, and Italian seasoning and ¼ teaspoon smoked paprika in a third shallow dish and stir to combine.
  • Dip each chicken tender in the flour, then in the egg, then in the panko to completely coat. Place on prepared pan.
  • Spray the tops with nonstick cooking spray. Bake 20 minutes, then flip the tenders and spray again. Continue baking until they’re cooked through to 165°F (about 15-20 minutes more).
  • Serve hot with ranch or bbq sauce or mustard for dipping.

This Instant Pot Chicken Breast is so good – and it’s always moist when you use a pressure cooker. This is a great dinner and can be done in under 30 minutes, so it is perfect for any rushed evenings. Don’t be scared of your instant pot–it is so easy to use!

Instant Pot Chicken Breast Recipe

Instant pots can be scary, but if you use them correctly, they are totally safe. I often think that some things taste better in the instant pot–including this chicken. You can add it in to so many dishes and it is so flavorful even by itself. Cooking chicken breasts can be a task, but making it in the instant pot takes all the pressure off of yourself and the pot will do it all for you.

There are so many different meals you could add this chicken to, but I love the idea of making a chicken salad or making chicken tacos! You could also use this recipe for meal prepping! Just simply store the chicken in the refrigerator for a few days after making and it will be already done for you when you need it! Have this dinner done quick so your family can have a stress free night!

Ingredients Needed

  • Soy Sauce: Give this recipe all the flavor!
  • Brown Sugar: Adds a bit of sweetness!
  • Chicken Stock: or broth
  • Spices: I add black pepper – you do not need to add salt because of the soy.
  • Chicken Breasts: I always use boneless skinless chicken breasts but you can also use chicken thighs. This recipe is not written for bone-in chicken breasts.

How to make Instant Pot Chicken

  • Add soy sauce, brown sugar, chicken stock, and pepper to the insert of an instant pot or electric pressure cooker. Stir.
  • Add the chicken breasts into the liquid.
  • Place lid on the pressure cooker and lock. Make sure the pressure valve is set to the sealing position keep steam inside. 
  • For fresh chicken breasts: Use poultry setting and cook on high pressure for about 10 minutes. When instant pot has finished, use a fork or utensil to do a quick release any remaining pressure. This is called a natural pressure release.
  • For frozen chicken breasts: Use poultry setting and cook on high pressure for about 15 minutes. When instant pot has finished, use a fork or utensil to do a quick release. Make sure your frozen breasts are separated, not in one big ball of ice or it will take longer to come to pressure and longer to cook.
  • Remove chicken from pot and slice. Make sure the internal temperature of the chicken breasts are 165 degrees F. Drizzle with juices and serve as desired, either as a main or you can even make sandwiches with it.

Expert Tips

  • I used chicken stock, but if you only have chicken broth on hand–that will work just fine too!
  • When using the instant pot, this recipe calls for a quick release. Some use a natural release. Each time you cook follow the recipe to know which one. Once the food is done baking for this recipe, do a quick release.
  • Always read the directions of your instant pot before hand to know the interworking of it because they are all different.

  • ¼ cup (59ml) low-sodium soy sauce
  • 1 tablespoon (13g) brown sugar
  • 1 cup (237ml) low-sodium chicken stock

  • 1 pound chicken breasts, thawed

Instructions

  • Add soy sauce, brown sugar, chicken stock, and pepper to the insert of an instant pot or electric pressure cooker. Stir.
  • Add the chicken breasts into the liquid.
  • Place lid on the pressure cooker and lock. Make sure the pressure valve is set to keep steam inside. 
  • For fresh chicken breasts: Use poultry setting and cook on high pressure for about 10 minutes. When instant pot has finished, use a fork or utensil to do a quick release.
  • For frozen chicken breasts: Use poultry setting and cook on high pressure for about 15 minutes. When instant pot has finished, use a fork or utensil to do a quick release. Make sure your frozen breasts are separated, not in one big ball of ice or it will take longer to come to pressure and longer to cook.
  • Remove chicken from pot and slice. Drizzle with sauce and serve as desired.

Make sauce for the chicken: remove the chicken from the sauce. Mix 1 tablespoon cornstarch with 1 teaspoon water. Turn the instant pot to sauté and add the cornstarch mixture. Cook, stirring, until it boils and thickens.

This Baked Chicken recipe is made in the oven and it is super easy to prepare! The chicken is perfectly cooked, always moist, and this is the easiest meal you can make for a weeknight dinner!

Baked BBQ Chicken

This oven baked chicken breast recipe is a foolproof chicken recipe. I start off lightly breading the chicken and then baking it, then halfway through I add the BBQ sauce to have it bake into the chicken. This recipe will be done in under 45 minutes and produces juicy chicken breast that is always tender.

I always use chicken breasts because we prefer white meat. If you like dark meat you can also use chicken thighs, but I don’t recommend using bone-in chicken for this recipe. This method is my favorite way of cooking chicken and I know you’re going to love it too.

Ingredients Needed

  • Chicken Breasts: Boneless skinless chicken breasts are what I always use, but you can also use chicken thighs (internal temperature and bake time will be different).
  • Breadcrumbs: I use Italian breadcrumbs or panko
  • Herbs and Spices: Smoked Paprika, Black Pepper, Onion Powder, Garlic Powder, and Kosher Salt
  • Barbecue Sauce: Any kind you would like! My favorite right now is G. Hughes brand, it’s sugar-free but it doesn’t taste fake.

How to make Baked Chicken Breasts

  • Preheat oven to 450°F. Spray a baking dish with nonstick cooking spray or line it with parchment paper for easy clean up.
  • If your chicken breasts are not even thickness, pound them with a rolling pin or a meat mallet, or slice them so they are uniform in size and thickness.
  • Place beaten egg in a shallow dish.
  • Place breadcrumbs and spices in another small bowl; stir to combine.
  • Dip each chicken breast in the egg then in the breadcrumbs, coating both sides with the crumbs. Place in an even layer in the baking dish.
  • Bake for 15-20 minutes, or until the chicken looks golden and crisp. Do not turn.
  • Pour the BBQ sauce evenly over the chicken and continue baking for 5-10 minutes or until sauce is bubbly and chicken is cooked through. The chicken should be 165°F, which you can check with a meat thermometer or instant-read thermometer.

Expert Tips

  • I love eating this chicken alone, but it is also delicious when added into any kind of salad or with a vegetable on the side, like Brussels sprouts. It brings an extra spice and texture into your meals!
  • I like to split the breasts in half to make them even throughout for even cooking.
  • Would also be great with a side of mashed potatoes, French fries, rice, pasta, or sweet potatoes!
  • Once you have the method for cooking chicken this way you can customize the flavors to your mood. Use cajun seasoning or taco seasoning, or herbs like oregano, thyme, and rosemary. You can even switch out the BBQ sauce for salsa, pasta sauce, or pesto.

Easy Baked Penne – this easy pasta casserole is FULL of cheese! It’s accidentally vegetarian and no one will know it’s semi-homemade! This is one of the best easy baked pasta recipe I’ve ever made.

Easy Baked Penne Recipe

Years ago I had a friend who introduced me to this easy baked pasta recipe. She made it for a 4th of July barbecue one time and we sat eating it for hours. I’ve been making it for potlucks and family dinners ever since.

When I researched baked penne pasta recipes online before making it, I found that so many of them have meat in them. I thought that was strange, because I’ve only ever had THIS Baked Penne, which is vegetarian. My friend didn’t eat meat, so neither did her pasta recipe. As a result, I’ve always made this without meat. And you know what? I don’t miss the meat at all – plus I often serve it with a side of baked or grilled chicken or some meatballs for protein. After all, it makes a HUGE batch, so we’re often eating it at a potluck.

The recipe is easy, using just a handful of ingredients, and comes together in minutes. Plus, do you see how cheesy this baked penne is??? OMG.

Penne Pasta Bake Secret Ingredients

There are two secret ingredients in this baked penne pasta. Can you guess what they are? They’re two things I’d never seen in a pasta recipe before, but they make the end result so cheesy and creamy I just never leave them out.

By the way, these two ingredients, if they weird you out, are two things I never eat alone. I ONLY use them in recipes, like Cheesy Egg Casserole.

  • The cottage cheese adds body (and protein) to the dish. You don’t taste it at all, plus it makes it even more cheesy. There’s TONS of mozzarella to make you forget about the cottage cheese, but this dish wouldn’t be as good without it.
  • Sour cream adds so much creaminess to this easy baked penne recipe. This result is almost like a creamy tomato sauce.
  • What other ingredients are there? Just pasta, spaghetti sauce, and garlic. You can use any jarred pasta sauce you like (I’ve used a variety of brands). OR, you can make your own red sauce.
  • I always kick it up by adding TONS (5 cloves) of pressed garlic. If you’re not a garlic lover, you can leave that out, but it gives a wonderful flavor to the dish. (Plus, it wards off vampires.) Then you add tons of cheese and bake it up.

How to Make Easy Baked Penne

  1. Boil the pasta in a large pot over medium heat until al dente. It will finish baking in the oven.
  2. Stir together the marinara sauce, cheeses, and garlic.
  3. Stir in the pasta and place it in the pan. Add more cheese and some ground black pepper.
  4. Bake until bubbly and golden. Serve with fresh basil.

Expert Tips

  • If you want to add some meat you can use cooked ground turkey, ground beef, Italian sausage, or leftover cooked chicken.
  • Turn this into baked ziti by using ziti shaped pasta.
  • You can also sprinkle parmesan cheese on top along with the mozzarella.
  • Store leftovers in the fridge in an airtight container and reheat in the microwave.

  • 1 12-16 ounce box penne pasta
  • 1 24 ounce jar pasta sauce (and brand/flavor you like)
  • 8 ounces cottage cheese , low fat is fine
  • 8 ounces sour cream , low fat is fine
  • 5 cloves garlic , pressed
  • 4 cups shredded mozzarella , divided

Instructions

  • Preheat oven to 375°F.
  • Cook pasta according to package directions then drain well.
  • In a bowl or in the pasta pan, stir together pasta sauce, cottage cheese, sour cream, and garlic. Stir in pasta, then stir in 2 cups of shredded cheese.
  • Spread pasta in a 9×13” baking dish. Sprinkle the remaining 2 cups cheese on top.
  • Bake for 15-25 minutes or until the pasta is hot all the way through and cheese is melted. Serve hot. Store in an airtight container for up to 3 days.
